FLOMARIA PASTA WITH SHRIMPS

Ingredients
  • 450-500 gr. of flomaria pasta
  • 300 gr. shrimps
  • 1 medium garlic onion
  • 3 cloves of garlic
  • 1 fennel bulb
  • ½ glass of sweet white wine
  • ½ glass of dry white wine
  • 1 chili pepper
  • 1 teaspoon of turmeric
  • 1 teaspoon of butter
  • lemon zest
Preparation

Boil flomaria pasta according to instructions. Melt the butter in a deep pan. Then sauté onion and garlic. Then add the fennel bulb and the shrimps and pour the wine. Afterwards, add the turmeric, the lemon zest, the chill pepper. Mix all ingredients together and cook it for 2-3 minutes. Having already boiled flomaria, strain them. Add then in the pan and mix them together with the other ingredients.

HONEY-MUSTARD GRILLED PORK TENDERLOIN WITH ROSEMARY

Ingredients
  • 2 pieces of pork tenderloin
  • 2 tablespoonfuls of Olive oil
  • 2 tablespoonfuls of mustard
  • ½ tablespoonful of honey
  • 1 tablespoonful of rosemary
  • ½ teacup of soda water
  • Salt and Pepper
Preparation

Place the honey and the mustard into a small mixing bowl. In a deep pan add the olive oil and sauté the tenderloin pieces until get golden. Afterwards add the rosemary, then pour with soda water and put the salt and pepper. Cook the pork tenderloin for 10-15 minutes. Then add the mustard, mix them all together and remove it from fire when it starts to boil. Cut the pork tenderloin into pieces and pour with sauce.
It can be accompanied with rice.

FAVA VELVET PUREE WITH CARAMELIZED ONIONS


Ingredients
  • 400 gr of santorini fava
  • 2 onions
  • ½ liter of water
  • ¼ of teacup of olive oil
  • Salt to taste
Ingredients to make the fava puree with caramelized onion
  • 2 onions
  • 4 spoonfuls of olive oil
  • 2 spoonfuls of capers
  • 1 spoonful of vinegar
Fava preparation

Put the water, the fava beans, the onions in a large cooking pot and set it to boil. When it starts to boil, reduce heat and simmer. Remove the foam coming in the pot's surface and let it simmer for approximately 1 hour, being careful to prevent it from catching. Put salt at the end. We can also mash it by using a blender in order to make a velvet puree. Serve it with olive oil and lemon or with caramelized onions.


Preparation of caramelized onions

Cut the onion into thin slices and put it in a deep pan with olive oil, cook it using medium fire for 10 minutes stirring regularly until caramelized. Be careful not to burn them and get bitter. Add vinegar and capers.
We serve fava putting on the caramelized onions.

PASTA WITH SUNDRIED TOMATOES


Ingredients
  • 500 gr. of spaghetti
  • 150 gr. of sundried tomatoes
  • 2-4 garlic gloves
  • 2 teaspoonfuls of dry red pepper flakes
  • Salt and pepper
Preparation

Boil, cook the spaghetti according to the package instruction. In a deep pan heat the olive oil, cut the sundried tomatoes into slices and cook them until sautéed, put in the dry red pepper flakes and cook it for 4-5 minutes. Afterwards, add the garlic and cook it for 5 minutes, add salt and pepper and remove it from the heat. Stain the Spaghetti and add them in the pan, mix them all together and serve.

SALAD WITH SUNDRIED TOMATO DRESSING


Ingredients
  • 1 rucola bunch
  • 1 small pepper cut into slices
  • 2 medium tomatoes cut into cubes
  • 1 small cucumber cut into cubes
  • 1 medium endive
  • 1 chopped onion
Ingredients for the dressing
  • 2 tablespoonfuls of olive oil/li>
  • 2 sundried tomatoes
  • 1 tablespoonful of balsamic vinegar
  • ½ tea cup of honey
Preparation

Wash the vegetables, put it in a deep bowl and mix them. As for the dressing, put all the ingredients in a blender and pour it into the salad, mix them and serve.

TORTILLA WITH OLIVE PASTE AND OREGANO


Spread olive paste on a tortilla, rub feta cheese, sprinkle oregano and wrap it. Preheat oven and bake it for 5 minutes.
We suggest you to spread on a toasted bread. It's a delicious starter.

Olive paste can be used in different ways. It's an alternative idea for sandwiches or an ingredient for a ntako salad, or you can add it in a red sauce or in a pizza.
